In the heart of North Yorkshire, a unique distillery is redefining the craft spirit landscape with an unwavering commitment to sustainability. Cooper King Distillery, founded in 2016 by Abbie Neilson and Chris Jaume, stands as a beacon of eco-friendly innovation in the world of artisanal spirits.
The Origin Story
Chris and Abbie's journey began far from the rolling hills of Yorkshire. It was a shared passion for adventure and fine spirits that led the couple to Tasmania, Australia in 2014. Here, they were inspired by the dedication to craftsmanship and sustainability in whisky production. Determined to bring this ethos back to the UK, they returned and set up Cooper King Distillery on a small plot of family land on the outskirts of York.
A Commitment to Sustainability
From the outset, sustainability has been at the core of Cooper King's mission. They are the first distillery in Europe to join the 1% for the Planet initiative, pledging to donate at least 1% of their annual sales to environmental causes. This dedication is evident in every facet of their operation:
Green Energy: The distillery is powered by 100% green energy, significantly reducing its carbon footprint.
Local Sourcing: Ingredients are locally sourced wherever possible. Their barley is grown in Yorkshire, supporting local agriculture and reducing transportation emissions.
Eco-Packaging: Bottles are made from 100% recycled glass, and their packaging is designed to be fully recyclable.
Innovative Distilling Techniques
Cooper King is known not just for its green credentials but also for the quality of its spirits. They produce a range of meticulously crafted products, including gin and whisky, using innovative techniques:
Cold Vacuum Distillation: This method allows the distillation of botanicals at lower temperatures, preserving delicate flavours and aromas that would be lost at higher temperatures. This technique is particularly highlighted in their award-winning Dry Gin.
Small Batch Production: Each batch is carefully produced in small quantities, ensuring maximum attention to detail and quality control.
Award-Winning Spirits
Gin - Their dedication to quality and sustainability has not gone unnoticed. Cooper King Dry Gin has won multiple awards, including a gold medal at the prestigious IWSC (International Wine & Spirit Competition). This gin, characterised by its vibrant citrus notes and rich juniper, is a testament to the distillery's craftsmanship and innovative approach.
New Make - A focus on sustainability and quality becomes beautifully captured in this wonderfully light and fruity New Make and show cases the quality behind their whisky. 100% floor-malted Maris Otter barley is double-distilled in a unique 900-litre Tasmanian copper pot still to produce a spirit that has so much potential, yet can already be enjoyed neat, long or as the base for your favourite cocktail.
Single Malt Whisky
First Edition - The first release as part of the Expedition Series, with just 589 bottles that sold out in record time! This was Englands first whisky distilled with net zero energy and was the realisation of a dream for Abbie and Chris. A wonderful whisky that was filled with notes of citrus fruits, custard cream, vanilla and ginger cake.
Transatlantic - their second release as part of the Expedition Series and offers a whisky adventure, using casks from Bordeaux and Kentucky to offer up a Whisky filled with flavours of fruit compote, vanilla pods, toasted oak and cocoa
Educational Initiatives
Beyond production, Cooper King is committed to education and community engagement. They offer distillery tours where visitors can learn about sustainable distilling practices, the science of spirit production, and the importance of environmental stewardship.
