A special release that is very different; Double Oak balances the classic flavours produced by ex-bourbon casks and the fruity and spicy notes that lighter charred virgin oak casks brings. A combination of Column and Pot distillation, followed by initial maturation in ex-bourbon casks, was then followed by a stringent cask selection process to assemble a batch of whisky with light and fresh characteristics. The strength was reduced to 50% ABV and the spirit was racked in lighter charred never-before-filled virgin white oak casks. Frequent sampling, nosing and tasting was required to achieve the right balance of fruit, spice, vanilla and toffee... Cheers
